Price
These two smartphones are expensive. They are both called “Ultra” for a reason. The Samsung Galaxy S21 Ultra 12GB RAM + 128 GB internal storage, starts at $999. And to purchase the 256GB or 512 GB storage variant, you’ll add $100 more.
Xiaomi Mi 11 Ultra on the other hand, falls into similar price range. It will cost you $950 for the 8 GB RAM + 256 GB storage variant. There is also a 12 GB RAM + 256/512 GB storage variant that will cost you a little more. Also note that none of these devices have an expandable space for SD card.

To be very honest with you, the display of these two smartphones are top notch. You can rock 120Hz refresh rate and QHD+ screen resolution concurrently on both devices. An ultra smooth experience like never before.
The Mi 11 Ultra has the brightest screen here. It peaks 1700 nits. Unlike the Galaxy S21 Ultra’s 1500 nits. However, one advantage of the S21 Ultra is the adaptive screen system. It helps to save battery. Depending on usage, the refresh rate can automatically regulate itself to 120Hz rate when fully in use, other times when the phone is idle, it drops very low in order to save battery life. This is one feature the Mi 11 Ultra lacks.

Both smartphones are 5G enabled. They are powered by the same chipset (Snapdragon 888). If you are a gamer and heavy user, you are in for a good buy. So anyone you buy out of these two, be certain of top notch performance.
